Fiddleheads were easy to prepare. Blanched once to take out the bitterness, water drained and boiled again. Then fried with garlic. Sprinkled cilantro on top. These were served with a light primavera pasta: spinach linguine, ribbons of carrot and zucchini, in a garlic butter sauce. Alas the photos were messy, too much in a hurry to eat!

Oh, basically you boil the fiddleheads twice w/a change of water. When they're cooked you can eat them or do something else like fry them w/garlic.

:) They aren't in season for very long. They're only avail roughly 2 weeks, and then they're gone... well, they have unfurled I guess!
