I always have an abundance of eggplant and chickpeas...olives too so I always think "Mediterranean"! I got this recipe from The Mediterranean Vegan Kitchen. It's basically a gratin made of all the above ingredients mixed with a tomato based sauce. It's topped with breadcrumbs and olives (I also added grape tomatoes) and baked for about 25 minutes.


With plain couscous and a side of roasted butternut squash and sweet potatoes. I know they don't really go with the main but I had the squash forever and had to cook it!

I made the Frittata recipe from The Uncheese cookbook. It was very good though a bit mushy on the inside. (I probably didn't bake it long enough!) It's got a variety of veggies inside: potatoes, onions, spinach, red bell pepper and zucchini. Below is the frittata out of the oven. The top was very dry and firm which is why I took it out when I did. I was afraid if I baked it longer it would burn.


Here's everything plated along with fresh OJ in my favorite Concordia University mug. I was enjoying the food so much I forgot to have some chocolate almond milk too! The pancakes and tempeh bacon are from Vegan with a Vengeance and they always come out great! By the way, the sauce on top of the frittata is just plain old vegenaise mixed with ketchup!

Green Temple Restaurant, Redondo Beach, CA

This place is all Vegetarian and will make lacto-ovo meals Vegan upon request. It's tucked away near the beach and the atmosphere is really awesome.

Walnut Loaf w/ steamed broccoli, mashed potatoes & gravy (mmmm, gravy......)



Simple Dinner Salad w/ creamed tofu dressing & fresh baked bread

I am so happy to have tried this recipe. It's quick, easy and tasty!

Here are my sausages. Kind of holey and not as pretty but soooo good. I changed up my spices a bit from her recipe by adding some poultry seasoning and extra paprika. I also accidentally steamed them for 45 minutes instead of 30 (I wasn't watching the clock) and they still came out good, the texture was nice and firm. I can't wait to try different variations.

Look at what I had for breakfast and lunch today! Recipes from Vegan Planet.



Banana Split Tea Bread. This bread is so nice! It's got all the components of a banana split (except the ice cream!): bananas, chocolate chips, pineapple, nuts and dried cherries.


Curried tempeh salad on whole grain bread was very good. It's got raisins, celery and almonds in it. Mmmm...

Okay Chefs and foodies!

I have about 30lbs of frozen cherries what should I do with them???

The cherries aren't naturally the sweetest but they have been sprinkled with sugar.

I'm looking for a good cherry crumble recipe and any others you might have. I always love your ideas so0o.....
